Pinspiration: Faithfully Gluten Free
This recipe has become a staple in my house. It is simple and easy to throw together, everyone likes it, and it makes great leftovers! What’s not to like?
I have made a few adjustments to this recipe for my personal tastes. When I make this for the kids, I mix the marinade ingredients in a gallon ziplock bag and add the chicken to this bag. In a second bag, I mix another batch of marinade and put in the vegetables. This saves the kids from spending literal hours picking out the chicken from the vegetables.
My vegetables of choice are bell pepper, mushrooms, onion, and zucchini.
I do not own a grill so I put each bag of ingredients onto a sheet pan and bake at 375 for about 20 minutes. The cooking time will depend on how big you cut your chicken and veggies and how loaded your pan is.
This recipes is great over any kind of rice. When I’m feeling healthy, I use cauliflower rice.
